Massaged Kale Salad
A fresh, cheesy kale salad that kids can help make with their hands!
Ingredients
1 bunch kale (dinosaur/lacinato kale works great)
1 tablespoon olive oil
1/2 teaspoon salt
Juice from 1/2 lemon (about 1 tablespoon)
1/3 cup grated Parmesan cheese
Instructions
Wash the kale and dry it well.
Pull or cut the leafy parts away from the thick stems. Throw the stems away or save them for soup.
Stack the kale leaves and slice them into thin strips.
Put the kale into a big bowl. Add the olive oil and salt.
Now the fun part! Use clean hands to gently squeeze and rub the kale for about 3 minutes. This helps make it softer and easier to eat.
Add the lemon juice and Parmesan cheese.
Toss everything together and enjoy!

Make It Vegan
Swap the Parmesan cheese for a vegan Parmesan or nutritional yeast.
Add white beans, chickpeas, or roasted tofu for extra protein.
A few avocado slices also make it creamy and filling!
Add Meat
Top with grilled chicken strips or shredded rotisserie chicken.
Crispy bacon bits taste great with the lemon and kale.
Sliced steak or grilled sausage can make it a full meal.
